I added to my compost pile about 10 gallons of spent wine that I'm currently processing. That raised the temperature to 131F despite the single digit temperatures last night.

My compost was reading 119 F yesterday (20 F outside, January 29th, 2009). That's in the center of the pile at a 20 inch depth. I have been keeping a rather generous layer of straw on top of it. You can see a video of it here: http://www.youtube.com/watch?v=RJn5iuzUWJc.

The advantage of using a thermometer is that it lets you know the precise level of thermophilic activity that's going on inside the pile, or even whether there is any thermophilic activity at all.

Your compost pile will decompose without a thermometer. How long it will take is another issue. The purpose of the thermometer is to monitor the temperature. The warmer the pile, the more active the decomposition. Read Chapter 8 of the Humanure Handbook.
