I have had several Sun-Mar composting toilets and they all suffer from the same weakness: their inability to deal with liquid waste. The Jenkins Compost toilet is a far better design concept. But to answer your question, try adding a fair amount of sphagnum moss (available in bales at a garden center). That should soak up the excess liquid

I have a Sun-Mar Excel Electric composting toilet. It has an overflow drain. Does anyone know how to stop it from overflowing once it gets started?
